Tender Greens Adds Steak and Falafel Wraps for Summer

Tender Greens has been through a turbulent stretch. The chain filed for bankruptcy in 2022 and was later acquired, emerging with a slimmed-down footprint. Today it operates more than 20 locations, mostly in California. The company was founded in 2006 by two chefs and a foodie, and its kitchen approach still leans on local market sourcing and seasonal ingredient rotation.

Corporate Executive Chef Oliver Plust framed the wraps as a balance play. "We wanted to create something packed with flavor while still feeling fresh," he said. "The combination of fresh herbs, bright citrus, bold sauces and carefully layered textures creates a wrap that's both satisfying and refreshing."

The price gap between the two options is notable. The falafel wrap undercuts the steak version by more than $3, which positions it as the value play for customers watching their spend. That spread could matter if Tender Greens is testing whether plant-forward options can carry comparable volume to protein-heavy items.

The wraps are available through October 7, after which the chain will decide whether either earns a permanent spot.
